Instructions:

  1. Preheat the Oven: Preheat your oven to 180°C (356°F). Line a baking sheet with parchment paper to prevent sticking.
  2. Mix Dry Ingredients: In a large mixing bowl, combine the chopped dried apricots, walnuts, peanuts, pumpkin seeds, sunflower seeds, sesame seeds, almonds, dried cherries, and candied fruits. Toss them together until well mixed.
  3. Bind the Mixture: In a separate small bowl, whisk the egg white until it becomes frothy. Add the honey to the egg white and whisk again until well combined. Pour this mixture over the dry ingredients in the large bowl. Stir everything together until the dry ingredients are evenly coated and the mixture starts to stick together.
  4. Shape the Cookies: Take small portions of the mixture and shape them into cookies. You can use a spoon or your hands to form them. Place each cookie on the prepared baking sheet, leaving some space between them.
  5. Bake: Place the baking sheet in the preheated oven and bake the cookies for about 12-15 minutes, or until they are golden and firm to the touch.
  6. Cool and Enjoy: Once baked, remove the cookies from the oven and let them cool on the baking sheet for a few minutes. Then, transfer them to a wire rack to cool completely.
